Sausage and Bean casserole
Feed a crowd with this super easy to make and extremely Moorish recipe
Serves 4-6 hungry people

Ingredients
- 3 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, peeled and crushed or finely grated
- 1 tin of chopped tomatoes
- 1 tin of baked beans
- 1 tin of butter beans or other beans
- 400 g sausages, any type works well, cut into 2-3cm thick slices
- 200ml vegetable stock
- Fresh thyme (use dry thyme if out of season)
Method
- Preheat the oven to 200C
- Heat the olive oil in an ovenproof saucepan or cast iron casserole over a medium heat, add the onion and garlic, season with salt and pepper, cover and cook, stirring every now and then for 5-8 minutes until the onions are soft.
- Add the sausages to the onions and leave the to take colour for 5 minutes
- Add the tomatoes, beans and stock and bring to the boil. Season to taste with a few good pinches of salt, pepper and some fresh thyme.
- Once bobbling transfer to the oven and bake in the oven for 40 minutes or until the sausages are cooked and the mixture is bubbling.
- Serve with baked potatoes, rice and/or lots of crusty white bread.
