Spinach & Raspberry Salad
A wonderful recipe for a crunchy Spinach & Raspberry salad kindly sent to us by one of our customers.
‘This is my adaptation of a recipe I found in Sainsbury’s when a student nearly 20 years ago. It had crispy bacon and walnuts instead of the almonds and seeds here. This salad never fails to impress and so many people have asked me for the recipe that I’m now giving it to Pipii’.
Just a note: the pectin in the apples, folic acid in the spinach, and magnesium and protein in the almonds make a really healthy combination. The sugar in the jam is a bit naughty, but it binds the ingredients together so well and satisfy’s all those sweet tooth’s!
Spinach & Raspberry Salad Ingredients
Serves about 4 adults
- Bag of Baby Spinach, washed & dried
- 2-3 tbsp Whole shelled almonds, cut in half lengthways
- 1 tbsp Sesame seeds
- 1 tbsp Sunflower seeds
- 2 red dessert apples
- 3 tbsp olive oil
- 1 tbsp raspberry vinegar
- 1 dessert spoon raspberry jam
- Ground sea salt & black pepper

Method
- Heat oven to 350°F/180°C and toast seeds and almonds on a baking tray for 4 minutes or until golden.
- Core and chop apples into bite-size pieces.
- Put the oil, vinegar and jam in a screw-lidded jar and shake.
- Season with salt and pepper. In a large bowl, toss together all the ingredients.
- Serve immediately.
