White Chocolate Jewels
Easy to make, small white chocolate jewels – serve with coffee as a petit fours. Feel free to experiment with the filling to create different tastes.
Just a note: the pectin in the apples, folic acid in the spinach, and magnesium and protein in the almonds make a really healthy combination. The sugar in the jam is a bit naughty, but it binds the ingredients together so well and satisfy’s all those sweet tooth’s!

Ingredients
(Makes approx 16)
- 100 grams mixed nuts, pistachios are nice
- 100 grams dried papaya and mango (or other dried fruit i.e. pineapple)
- 200 grams of good quality white chocolate
- 1 tbs of rum (optional)
Method
- Chop the dried fruit and nuts roughly and mix together
- Melt the white chocolate by putting it into a heatproof bowl over a saucepan containing gently simmering water, Stir gently until melted and smooth
- Mix the dried fruit and nuts into the melted chocolate (leave a little of the fruit and nut mixture for decorating) add the rum and stir. Spoon the chocolate mixture into small paper cases or spoon on a sheet of greaseproof baking sheet and decorate with the leftover mixture. Leave to cool.
These chocolate jewels make a beautiful present. Present in eco cellophane bags and tie with a ribbon. Perfect!
