  • Eton Mess

    Absolutely delicious and classic summer pudding, the combination of crunched up meringues and fresh ripe strawberries folded together into whipped cream is just a dream combination.

    Eton Mess is a dessert traditionally served at Eton College on 4 June. Make your meringues the day before you want to serve the pudding (you can even make them several days in advance just ensure that they are stored in an airtight container).

    Meringues

    Ingredients

    • 3 free range egg whites
    • 175g caster sugar

    Method

    Preheat the oven to 140°C

    1. Separate the egg whites and yolks. Ensure that no yolk is with the egg whites. Save the yolks for making homemade custard or scrambled egg or omelette.
    2. In a bowl whisk the egg whites into firm peaks, then gradually whisk in a little sugar at the time, until you have a stiff shiny meringue. Use two spoons or a piping bag for a professional look to dollop out on ready prepared lined (parchment paper) baking sheets.
    3. Bake in the oven for approx. for 60-85 mins for a dry crumbly (good for Eton mess) meringue. Leave them to cool on the baking sheet, until completely cooled.
    • 1 tbs of icing sugar
    • 6 Meringues (baked or shop bought)

    Method

    Preheat the oven to 140°C

    1. Crush up your meringues into a glass bowl, cut up your strawberries into quarters or smaller size if you prefer.
    2. Whip the double cream, once whipped, mix in the icing sugar and gently fold through the meringues and strawberries.

    Looks beautiful served in glass bowls or our Union jack Ice cream cups!

  • Wedding Confetti Ideas

    It's wedding season and the sun is slowly
    beginning to show its bright side!

    We have made a little compilation of gorgeous wedding confetti ideas, cones, baskets and suggestions of how to easily create confetti cones and envelopes with little effort. Lots of yummy doilies which makes great cones in no time. 1 large size doilies will cut into 3 triangles for a good size cone. Stock your filled cones using anything from rosebuds to lavender, tissue paper, birds or flower seeds.

  • Cupcake Wrapper T-light Holders

    1st June: Summer has arrived and hopefully this means lots of sun and many an evening spend in the garden, here's hoping anyway!

    Candles are an essential for summer evening, you can either make some wrappers out of cake wraps , use the ever popular mason jars, a jam jar or indeed stock up on a couple of lovely bamboo candles just in. Also see our ball jars featured in this months Modern Gardens magazine.

    So quick and simple yet so pretty and effective…

    You will need:

    • A laminator
    • Laminator pouches
    • Lacer cut cupcake wrappers
    • Tissue paper (optional)
    • Stapler

    Cupcake Wrapper T-light Holders

    Method:

    A pack of our cupcake wrappers will make you 12 t-light holders but of course you only need to make as many as you wish…

    • Take out as many wrappers as you need.

    You can either just laminate them as they are or you could put coloured tissue paper behind the lacer cut images should you wish to add a little colour to your table decorations.

    • If using tissue paper, cut a piece of coloured tissue paper that covers the back of the wrapper but does not protrude the edges. Secure it lightly to the wrapper with glue or double sided sticky tape. (this is just to make sure it stay in the right place when laminated).
    • When secure and glue has dried place wrapper inside laminator pouch. Or if no tissue paper is used just place wrapper straight inside pouch.
    • Now laminate and leave to cool.
    • Next cut gently round the wrapper leaving a 2-3 mm edge.
    • Finally finish off by securing the two ends together by stapling them together. It is not recommended to glue ends together as the heat from the t-light candle placed inside could ‘melt’ the glue and make it ‘spring’ open when in use causing candle to be knocked over.
    • Tea-light candle is now placed in the middle. We would recommend that it is placed in a small glass container.
