American Pancakes

American pancakes are light and fluffy and great for a weekend breakfast or festive brunch and very easy to make. They have become an easy Sunday favourite in our home. Served with fresh fruit and maple syrup, what could be more tempting on a Sunday morning?

American Pancakes

Ingredients:

  • 225 grams of self-raising organic flour
  • 1 tsp of sugar
  • A pinch of salt
  • ½ tsp of carbonate of soda
  • 1 tbs of butter, melted (15grams)
  • 2 free-range eggs
  • 300ml of milk

Method:

  1. In a bowl, mix flour with carbonate of soda, sugar and a pinch of salt.
  2. In a separate bowl whisk together melted butter, 300ml of milk and two eggs
  3. Whisk together the milk mixture with the flour mix, ensure that there are no lumps, leave to stand for 10 minutes
  4. Now heat up a frying pan, melt a little butter and with a ladle place three dollops of pancake mixture on the pan. If you like extra big pancakes then just place one big dollop in the middle of the pan.
  5. Watch the little pancakes grown in thickness, turn over when little holes appear in the mixture.
  6. Serve stacked with sweet maple syrup and fresh fruit
