An indulgent cookie, rich in chocolate, nuts and the sweet taste of dried cranberries, what could be better?

  • 125 g soft butter
  • 200 g caster sugar
  • The seeds from a vanilla pod or 1 ½ teaspoon of vanilla essence
  • 1 organic egg
  • 225 g plain organic flour
  • 1 tsp Baking powder
  • 1 tsp salt
  • 100 grams milk chocolate
  • 100 grams hazelnuts, chopped (or you can use 50 grams of nuts and 50 grams of dried cranberries)


  1. Preheat oven 180C
  2. In a bowl mix together butter, sugar and the vanilla seeds.
  3. Add the egg and mix well.
  4. Combine the flour, baking powder and salt and fold it into the butter mixture.
  5. Chop the chocolate, hazelnuts and cranberries (optional) and fold into the mixture.
  6. Roll the dough into a 5cm sausage shape and cover with cling film, leave to cool in the fridge for 1 hour.
  7. Remove the dough from the fridge. Cut the dough into 1/2cm thick slices, transfer to a lined baking tray, ensure enough space between each cookie as they will spread when baking.
  8. Bake for 8 minutes and leave to cool on a rack.
