Devine Chocolate Cupcakes

A sure hit with all chocoholics. Create a chocolate sensation by adding a chocolate frosting.

Devine Chocolate Cupcakes

Ingredients

Makes 18-24 cupcakes, you can make more cakes by using different size cupcake cases. For a tempting display, why not use lots of different toppings and present on a large platter.

  • 50g good quality cocoa powder i.e. Green & Black’s
  • 250ml boiling water
  • 180g plain flour
  • 2 tsp baking powder
  • A pinch of salt
  • 125g unsalted butter
  • 2 free-range eggs
  • 200g caster sugar
  • 2 tsp vanilla extract

To make ...

Pre heat oven to 200°C, place cupcake cases in baking tray, if using a standard baking tray make sure the cases do not touch.

Please note that the dough is very runny, but do not panic as they bake to perfection.

  1. Pour the boiling water in a bowl with the coco powder to dilute, stir thoroughly to remove any lumps and leave to cool.
  2. In a separate bowl whisk together the butter and sugar until light and fluffy. Add one egg at the time, stirring thoroughly. Now add the vanilla extract to the mixture.
  3. Add the flour, salt and baking powder to mixture until mixed together, then add the chocolate liquid stirring at all times until fully mixed in. (very liquid).
  4. Pour or spoon the cake mixture into the cupcake cases, bake in a hot oven for 14-16 minutes, check with a skewer to if the cupcakes are ready. Leave to cool on a wire rag.

Chocolate Frosting

Especially delicious on chocolate cupcakes and banana muffins.

  • 250g dark chocolate – if making the cupcakes for a children’s birthday, use good quality milk chocolate, such as Green & Black’s or Belgium milk chocolate
  • 250ml double cream or whipping cream.

To make ...

  1. Chop the chocolate into small pieces and place in a heatproof bowl. Heat the cream – be careful to avoid it boiling.
  2. Poor the cream over the chocolate pieces, leave to sit for 5 minutes before using a electric wish to stir the frosting into a shiny, even frosting.
  3. Smear a large helping on each cake or for a professional look, use a ‘bag’ to create small chocolate master pieces.
