Happy, light and fluffy cupcakes with icing

A light and fluffy treat with a twist. Top with a butter icing and decorate with festive colourful sprinkles and happy faces. Makes 12 Happy and festive cupcakes.

Ingredients:

  • 150g butter (room temperature)
  • 150g caster sugar
  • 3 organic eggs
  • 175g of self-raising flour
  • ½ tsp baking powder
  • 1 tsb vanilla essence

Happy, light and fluffy cupcakes with icing

Method:

Pre-heat the oven to 180°C, Place cupcake cases in cupcake baking tin. If using a standard baking tray make sure the cases do not touch.

  1. With an electric whisk. Cream the butter together with the sugar until the mixture is light and fluffy. Gradually add one egg at the time. Whisk in the vanilla essence.
  2. Sift in the flour and baking powder and fold into the mixture
  3. Add your flavouring to the mixture
  4. Divide the mixture between the cupcake cases and bake for 16-20 minutes, check with a skewer to if the cupcakes are ready. Leave to cool on a wirerag before decorating the cakes.

Option: You can flavour the sponge with favourite’s flavours chocolate or lemon curd

Butter icing

Ingredients:

  • 100g butter softened
  • 215g icing sugar
  • 3 tsp milk (optional)

Method:

  1. Beat the butter with a wooden spoon until it's creamy or soften in the microwave for a few seconds
  2. Sift in the icing sugar and mix well, adding a little at a time
