Small & Delicious Marzipan Christmas Cookies

Very moorish, they have a lovely crunch. Really easy to make, prepare the dough a day ahead and get young and old involved in making cookies.

Small & Delicious – Marzipan Christmas cookies


  • 200g butter (room temperature)
  • 90g icing sugar
  • 75g marzipan (grated)
  • 270g plain flour
  • 1 tsp vanilla sugar or ½ tsp vanilla essence
  • 1 organic egg
  • 100g light brown sugar (large crystals)


Day 1

  1. Cream the butter and icing sugar until light and fluffy
  2. Fold in the grated marzipan
  3. Add flour and vanilla sugar/vanilla essence and fold together into the finished dough. You will have to use your hands to get the dough together into a ball.
  4. Divide the dough into four pieces, roll each into a 2cm diameter sausage and wrap in cling film – leave in the fridge overnight to cool.

Day 2

  1. Preheat the oven to 175C, line two baking trays with non-stick baking parchment
  2. Wish together the egg in a bowl and prepare a large plate with the light brown sugar.
  3. Take the dough rolls one at the time, dip in the egg wash and roll in the sugar to cover.
  4. Now cut the rolls into individual biscuits, approx 5mm wide and place on the lined baking tray – taking care not placing them too close together.
  5. Bake for approx 12 minutes and leave to cool on a wire rag.
