If baking for children, use milk chocolate instead for a milder taste.

Outrageous Chocolate Cookies


  • 100 grams chocolate with high coco contents chopped
  • 2 tbs butter
  • 50 grams of plain flour
  • 1/3 tsp baking powder
  • A small pinch of salt
  • 1 free-range egg
  • 75 grams of light brown sugar
  • ½ tsp vanilla extract
  • 100 grams chocolate with high coco contents cut into chunks


  1. Pre-heat the oven to 175C, prepare a baking tray with grease proof paper
  2. Chop 100 grams of chocolate into small chunks and heat in the microwave to melt, initially for one minute, add butter and heat for a further minute, stir in between, continue until the chocolate and butter has melted. Make sure not to overheat, as this will ruin the chocolate.
  3. In a bowl sift together with flour, baking powder, salt
  4. With an electric mixer, beat together the eggs, sugar and vanilla extract at high speed until light and fluffy. Reduce the speed to low. Mix in the chocolate mixture. Now fold in the flour mixture until just combined. Finally stir in the chocolate chunks.
  5. Drop a heaped tablespoon of mixture onto the prepared greaseproof paper; leave a gap 3-4 cm between each cookie. Bake in a warm oven, rotate the baking tray halfway through, for 12-15 minutes until cookies are shiny and crackly yet soft in the centres. Cool on the baking tray for 10 minutes, then transfer to a wire rack to cool complete.
