Quick and Easy Cinnamon Buns

Makes around 12-20 (depending on size of course)

Just love love this recipe: unexpected guest, unhappy kids - this recipe will always get you out of a hole. It is quick, easy and very undemanding on ingredients.

Quick and Easy Cinnamon Buns

Ingredients:

  • 6 tbsp /or 85ml lukewarm water
  • 7g (1 sachet) dried yeast
  • 300 ml milk (I used semi skimmed)
  • 75 g melted butter
  • 35g sugar
  • 1 tsp salt
  • 450g plain flour (you may need a little more at the end to make the dough non-sticky)
  • 70g butter
  • 60 light brown sugar
  • 2 tsp cinnamon (if you really like cinnamon add a bit extra)
  • Icing sugar to top with icing at the end.

Method:

Use a large bowl and a wooden spoon to mix.

  1. Dissolve yeast into the lukewarm water.
  2. Once yeast is dissolved, add the milk, sugar, salt and finally the melted butter, stir in all until dissolved.
  3. Next stir in the flour, adding it as a couple of portions make it easier to stir in...
  4. The dough should be moist but non sticky when finished, you may need to add a little more flour at the end to achieve this.
  5. Now, take the dough out and with your hands, shape into an approx 30 x 25cm piece. A rolling pin can be used but take care not to overwork the dough with this.
  6. Next mix 70g butter, 60-65g sugar (light brown is ideal, but granulated ordinary sugar can easily be used) and 2 t-spoons cinnamon together to make a smooth paste which is then spread across the rectangular dough.
  7. Roll the dough together on the long side and slice into pieces of 1.5-2cm thickness. Lay on a piece baking tray.
    (If you want to make larger ones, just roll the dough from the shorter side and cut into 2-2.5cm pieces. This will make larger and fewer rolls and they will also need a little longer in the oven.)
  8. Cover 2 baking trays in parchment paper and place the roll on these with a bit of space between each one, they will spread and rise while baking. Cover with a damp clean t-towel or use cling film.
  9. Put the oven onto 220 degrees and leave buns to rest under cover for approx 30min.
  10. You can now brush the top with a whisked raw egg to achieve a ‘glossy finish’ once baked but the egg only adds to the look not the taste!
  11. Now ready to go in the oven for 12-15 min depending on sizes.
  12. Once baked, leave to cool for a bit before putting the icing on top.
