Quick & Easy Gingerbread Loaf

  • 175g unsalted butter (if no unsalted is to hand, salted butter makes a yummy cake too)
  • 200g sugar
  • 3 tablespoons golden syrup
  • 250ml milk
  • 250g plain flour
  • 1 tablespoon ground ginger
  • 1 tea-spoon ground all spice
  • 1 tea-spoon bicarbonate of soda


  1. Warm the oven at 180c but reduce to 160c once the cake goes in!
  2. Mix flour and spices + baking powder together and put aside
  3. Combine milk, sugar, butter and syrup in saucepan together and bring to a boil slowly, once all melted, take off heat and leave to cool for a few minutes.
  4. Next pour it into flour mixture and give a good whip to make sure all lumps have vanished.
  5. Put in prepared tin using either baking parchment to line (my preferred choice) or grease and flour tin and the bake for 1 hour.
  6. Enjoy!
