Simmnel Muffins

A tempting twist on an Easter classic, these cute delicious fruit and marzipan muffins are sure to put the Easter bunny out of business.


  • 150g mixed dried fruits
  • grated zest and juice 1 medium orange
  • 150g softened butter
  • 150g golden caster sugar
  • 2 free-range eggs, beaten
  • 225g self-raising flour
  • 1 tsp mixed spice
  • 4 tbsp milk
  • 100g marzipan, cut in small pieces

Simmnel Muffins

To decorate

  1. 100 grams of Icing sugar
  2. Juice of ½ orange juice
  3. 50 grams of marzipan and handful of small chocolate eggs


  1. Soak the fruit; for a fast method, tip the fruit into a bowl, add the zest and juice of the orange and microwave on medium for 2 minutes (or you can choose the slower method of leaving the fruit to soak for 1 hour). Line 12 deep muffin tins with paper muffin cases.
  2. Preheat the oven to fan 180C. Beat together the butter, sugar, eggs, flour, spices and milk until light and fluffy, stir the fruit in well.
  3. Half fill the muffin cases with the mixture. Divide the marzipan between the muffin cases, spoon the rest of the mixture over it. Bake for 25-30 minutes, until risen, golden and firm to the touch. Leave to cool.
  4. Decorate your simnel muffins; either use orange icing for your muffins dotted with chocolate eggs. Or thinly roll out 50 grams of marzipan on a work top dusted with icing sugar. Press out 6 rounds with a scone cutter, use a rabbit cutter to cut out rabbit shapes and decorate the remaining muffins.
