Soft Honey Gingerbread Hearts

All the bakeries in Denmark and Germany make and sell these; these soft and delicious tasting hearts are mostly decorated with a thin coat of dark chocolate and decorated with a vintage decoupage image of Father Christmas or Angels and your loved ones name written in white icing. If you have ever visited a Christmas market in Europe you are sure to have seen these beautiful hearts at the many Christmas stalls.

This portion will make: 2 x 7″ hearts or approx 12 x small 2″ hearts

Ingredients

Serves 8

  • 200 grams honey
  • 90 grams sugar
  • 1 egg, lightly beaten
  • 1 tsp baking soda
  • 1 tsp of ground cinnamon
  • 1 tsp of ground cloves
  • 1 tsp of ground ginger
  • 360 grams plain flour sifted

Soft Honey Gingerbread Hearts

For the decoration

  • Dark chocolate
  • Royal icing
  • Decoupage image of Father Christmas or angles

Method

  1. In a saucepan warm up the honey on low heat until melted (approx 15 mins) Do not let it boil. Remove from the heat.
  2. In a bowl add the sugar and pour the warm honey on top. Stir and let it rest until luke-warm.
  3. Stir in the egg, then the baking soda and the cinnamon, cloves and ginger. Mix until combined.
  4. Add the flour and knead the dough. It may feel sticky but try not to add too much extra flour. Wrap the dough in plastic and leave it to rest for 30 minutes on the side.
  5. Preheat the oven to 170C
  6. Knead the dough and roll it out on baking paper dusted with flour. Roll into 5-10 mm thickness and cut out the hearts. Bake the hearts in the centre of the oven for 10-15 min depending on size until golden and “puffy”. Transfer to cooling racks.
  7. If you want to hang your hearts as decorations, make a hole in the heart for the ribbon once transferred to the cooling rack.

Decorating your Honey Ginger hearts

  1. • Break the chocolate into small pieces, to melt it, transfer to a heatproof bowl over a saucepan containing gently simmering water, Stir gently until melted and smooth. Spread the melted Chocolate evenly; place a decoupage Santa or Angel in the middle of the heart (optional). Leave to set. Once set, use white royal icing to make a beautiful pattern and write your loved ones name and give as a present.
