Swiss Roll

An all time classic; a Swiss roll is made by rolling a thin sheet of sponge cake spread with jam into a log shape. Usually served in slices, the result is a spiral of cake layered with jam.

When baking, take care not to overcook the sponge – any crispness or hardness will make it liable to crack when rolled. Instead, remove the sponge from the oven when it’s springy to the touch and just lightly golden-brown. Sprinkle some caster sugar over a sheet of greaseproof paper, and then quickly turn out the sponge cake directly on to it before rolling it up.

Ingredients

  • Butter for greasing
  • 4 Large eggs
  • 125grams caster sugar, plus extra for sprinkling
  • 125 grams self-rising flour
  • Icing sugar for sprinkling
  • Filling: 3 heaped tablespoons of raspberry jam (warmed up)

Method

  1. Lightly butter the Swiss Roll tin, line with greaseproof paper then lightly butter the parchment to stop the baked sponge from sticking. Pre-heat oven to 220C
  2. Put the eggs and sugar into a mixing bowl. Mix together at high speed until the mixture is light and fluffy.
  3. Sift the flour into the egg-mixture and fold in gently, but thoroughly to avoid any lumps
  4. Turn the mixture into the prepared baking tin and spread evenly into the corners of the tin
  5. Bake in a pre-heated oven at 220C for 10 minutes or until the sponge is golden brown.
  6. Turn the baked sponge (inverted) onto a large piece of baking parchment/greaseproof paper sprinkled with caster sugar. Pell of the baking paper and trim the edges of the sponge with a sharp knife.
  7. Roll up the sponge and baking parchment together from the short end. Leave to stand for 2-3 minutes – no longer or the sponge may split.
  8. Unroll the sponge and remove the baking parchment. Spread the sponge with the warmed up jam. Roll up the sponge again and wrap tightly in the baking parchment and leave to cool.
  9. Serve with sprinkled icing sugar.

Notes: Variations can include whipped cream fillings, sometimes mixed with chopped fresh fruit; the sponge itself can also be flavoured with ingredients such as chocolate.
